A recipe for the time poor!!!!

Another recipe from the school cookbook that we have made more than once recently.
Layered Family Casserole
Although these photos aren't great it is a good recipe that takes such a little amount of time to prepare. It's not fancy but is tasty and there are plenty of variations. It would also be a good recipe for uni students as it's economical!! This recipe also appears in the CWA cookbook.

LAYERED FAMILY CASSEROLE
1/2 cup uncooked rice
2 cups frozen peas and corn
1 onion, finely diced
1/2 red capsicum diced
550g jar of tomato based pasta sauce
1 cup water
500g minced beef
1 cup grated cheese

Preheat oven to 180 degrees C
Spread uncooked rice over the base of a greased casserole dish
Layer the peas, corn, onion and capsicum onto the rice
Finely crumble the raw minced beef over the vegetable layer
Mix together pasta sauce and water and pour over the mince layer
Sprinkle with grated cheese
Cover and bake in oven for 1 1/2 hours removing cover for last 1/2 hour.

Looks delish! How easy to throw that together and pop it in the oven and have all that spare time in your sewing room, thanks for the inspiration.....
